I love the staff and the food in this place. I'm always greeted with a grin and a "Edgar's in the Houuuuse!" by the owner and staff members. They actually went out of their way to learn my name and recognize me on sight.
The sandwich:
Very kind staff, and they were quick on getting my order out. I would recommend for a quick bite for lunch.

I feel like these guys on the east side make these sandwiches blindfolded. Or perhaps with their feet. Seems like every time I order a sandwich in any form other than “fully involved”, these knuckleheads wanna load it down with stuff I wanted excluded. They also seem to do a can-can on the bread before they send it out. A squashed, incorrect sloppy mess.
What makes this place brilliant, however, is the large collection of hot sauces. I think that part of what keeps me coming for more is the hot sauces rated 9 and 10 in the spicy scale with a Hook and Ladder sandwich. (My mouth is watering just thinking about it!)
So I’ve since tried the east side location once more. I also tried a firehouse around 100 miles away as a control group. Here’s my experience of this location, knowing what I should expect from a further location.
The store:
Vastly inferior to the now defunct west side location. Heck this place is at least twice as bad as the Owensboro location. Slow “to-go” wait time. Sloppy sloppy sandwichmanship. Soggy, poorly trained staff. I have no concrete knowledge as I’m just an avid sub fanatic; However, the staff strikes me as not only the lowest paying job this side of Hong Kong. But borderline shell-shocked. These guys do-not-give-a fuNk about this place. And it’s not their fault. Most “mid-ranged” fast food wannabe chains have this issue in middle management. They want to come in and push a bunch of fluff and productivity suffers. Pay these kids a little more and motivate them to work quickly + precisely. Will try your subs once more in a few months. The review will most likely be updated in kind. Please bring back west side location. It was so much better. Like a real firehouse subs should be.
Arrived late in the evening, but still before 8pm, and walked up to the place and the open sign was turned off, and the chairs were up on the tables for more than half the place. The door was open and the hours said they were open. There was 1 there customer in the place. I placed my order and it took about 15 minutes for them to get the food ready. I thought this was odd being they were so slow. The food was good, but it seemed obvious they were more interested in getting stuff cleaned up and ready to go home than waiting on customers.
Never had a sub I didn't like. Chili is good too. Maybe a little overpriced.
Staff is friendly but there’s always at least one employee loudly mouthing off in a manner that could definitely be perceived as unprofessional. Makes the whole place look bad, especially considering they can’t get my ORDER CORRECT AT ANY POINT.
The staff:
This most recent visit to green river rd firehouse was actually somewhat clean this most recent time. First time they’ve actually had sauce cup lids in what seems like forever. All in all, you can just see that this place is poorly run. Which is really a shame because it’s giving these poor folks in town the impression that firehouse isn’t great. I’d say firehouse is one of the best franchises for subs, but this store is a joke. West side wasn’t this bad. What happened?
